Special offers for different resorts are announced based on the season and obviously the high season would be expensive considered to the low season.
I have just come back from the wonderful Meeru Island Resort in the North Atoll. Food and drink are VERY expensive out in the Maldives. You may feel that you have to pay a little extra in the UK to your tour operator but it is alot less than you will pay in the Maldives. Even when all inclusive, many resorts do not include Ice creams, sweets, alcoholic, crsips, cocktails and non alcoholic cocktails, certain excursions and use of snorkel/dive equipment. So, if you go half-board, chances are you will pay alot more. Also, be warned. Many resorts operate a "cashless" system, whereby you simply sign for all non all inclusive items (even in the resort shop - you don't use cash) and then when you hit a limit (usually $500), you are called to reception to pay it off using either cash or credit card. Make sure you keep an eye on your expenses as these can add up, as I found out! Again, be warned; The Maldives does NOT accept Maestro debit cards, so make sure you have a credit card handy to pay. Mastercard and Visa widely accepted. Don't let this put you off. The Maldives is the most amazing place on earth and you will have a brilliant time!
